Selections for Tonight's Tasting
Wine 2.0 Selections
Cycles Gladiator Chardonnay 2008 (...more) The 2008 vintage of Cycles Gladiator Chardonnay exhibits a fruit-forward, crisp style with a subtle use of oak. Only a small portion of the Chardonnay underwent barrel fermentation, and the final blend includes 11 percent Viognier and 5 percent Pinot Gris. The end result is a refreshing and versatile wine suitable for virtually any meal or occasion. This pale-straw wine is bright and rich, featuring aromas of green apple, peach, melon and a touch of buttered toast. Tropical fruit flavors are balanced with floral notes, vanilla and spice. The finish is fresh yet silky. Enjoy with light entrees such as seared halibut with summer vegetables or richer fare like lobster and saffron risotto cakes with lemon and truffle butter. Hahn Estates 2006 Monterey Pinot Noir (...more) The deep but muted ruby hue hints at the silky tannins of this dynamic and multi-faceted wine. The white and black pepper background aromas blend nicely with clove fragrances on the front. Every sip uncovers new flavors and textures. When given time, the wine evolves from edgy to extreme bliss with a tangy burst of fruit and spice, backed by cool-climate acidity that carries each separate flavor component on to the next sip. The structure and balanced acidity of this wine allows the flavors to hang for a moment before it finishes with a light, slow and even departure that leaves the mouth infused with fresh pomegranate flavors. Serve with baked Halibut on a bed of sautéed Swiss chard and puréed potatoes or, to bring out the spice, try with kicked up Pasta Arrabiata. Hahn Estates 2007 Central Coast Meritage (...more) Deep, bold, brooding and complex, the Hahn Estates 2007 Central Coast Meritage Bordeaux-style blend begins with a rich and full aroma followed by a heightened level of intensity compared to recent vintages. A generous percentage of Petit Verdot and Malbec in the blend add tantalizing depth to the tannic profile, deepen the color in the glass and enhance richness in the mid-palate. When given time, notes of bergamot, cardamom and blackberry develop as this wine remains smooth and balanced while simultaneously maintaining the multi-dimensional character for which traditional Meritage blends are known. Round, juicy, luscious flavors greet brisk tannins and viscous mouthfeel, making this the perfect wine for strong, savory meats and hearty pasta dishes. Try it with barbecued tri-tip steak or slow-cooked brisket served with Swiss chard and white corn. Smith & Hook 2006 Central Coast Cabernet Sauvignon (...more) Rich in the glass and bright on the nose, the 2006 Smith & Hook Central Coast Cabernet Sauvignon, opens with aromatics of dark fruit, black currant, cassis, clove, and cedar. Layered aromas of plum and cocoa develop into a rich blend of raspberry jam and ripe berry with a hint of vanilla. The substantial, well developed tannins are suspended through the finish with a finely integrated acidity. In true ranch style, this wine pairs well with strong red meat. Try it with prime rib and horseradish, or braised shortribs, with smashed garlic and chive red potatoes.
